Shiraz
Varietally speaking, Shiraz displays an abundance of flavours, a perceived sweetness and plenty of tannins. Wines, which are higher in alcohol, will also tend to impart a spicy hot feeling in the back of the mouth. When grown in different climates, Shiraz can often have marked differences in its overall flavour, body and characteristics. Generally in a cooler climate Shiraz will impart more peppery and spicy characters, they are finely structured wines with velvety, dusty and powdery mouth feel sensations. In warmer regions Shiraz tends to be fuller bodied, with mouth puckering tannins and packed with flavours, which include plum, chocolate, spice, liquorice, blueberry and blackberry.

Merlot
Typically, Merlot produces medium bodied wine, soft, with simple tannins, fresh acidity, showing berry, plum and fruitcake characters. It appears to grow best in cooler climates, where it develops stronger fruit flavours such as blackberry, mulberry and cassis, and evolves with firm tannins. However wines from warmer climates tend to exhibit more cherry and plum like flavours and have a round, soft mouth feel.

Cabernet Sauvignon
As the most ubiquitous red grape variety in the world, Cabernet Sauvignon is regarded by many winemakers as the most noble offering them an opportunity to express their artistry in creating the flavour profile and structure of the wine. Grown in cooler climates these wines often display herbaceous and vegetal characters, in contrast, warmer climates produce wines exhibiting minty, berry and blackcurrant flavours. Young wines will often display firm tannins, creating a drying sensation in the mouth. With age these tannins become more subtle and create a fine grainy or powdery feeling.

Grenache
Grenache is the world's most widely planted grape used to make red wine, sometimes made into a stand-alone varietal, frequently as a rosé, but most often as a backbone of red blends. On its own, Grenache makes fleshy, heady, very fruity wines in its’ youth, with bottle age however it can develop tobacco, dried apricot and cigar box characters. Nose and mouth feel will vary markedly depending on the style.

Sangiovese and Barbera
Both these varieties are relatively new to Australia however they are gaining popularity quickly. The flavor profile of Sangiovese is fruity, with moderate to high natural acidity and generally a medium-body ranging from firm and elegant to assertive and robust. Barbera is an ancient variety with its historical roots in Italy, where today it remains the second most widely planted red variety, after Sangiovese. The highest quality Barberas come from the Piedmont region.
