Angelo is our talented Executive Chef. He has worked at Matilda Bay for the past 15 years and along with his dedicated team continues to offer the latest in food innovation, presentation and design.

Elissa is our Senior Sous Chef. She has worked at Matilda Bay for the past 10 years. Elissa has travelled around the world, gaining valuable skills that enable her to influence the contemporary a la carte menu as well as support our Executive Chef in the day to day running of the kitchen.

Colin is our Junior Sous Chef. Colin’s creativity and skills have enabled him to win numerous awards such as 2006 Apprenctice of the Year.

Katie is our Junior Sous Chef. Katie’s skills and passion make her an extremely valuable part of the Matilda Bay team.

Both Colin & Katie have traveled all over the world gaining many new skills and experience. They assist the Executive Chef and the Senior Sous Chef in the day to day running of the kitchen.

Warwick Lavis

Warwick Lavis is our Managing Director and has held this position for the past 25 years. Warwick is a busy man, looking after the restaurant, the Matilda Bay Tea rooms aswell as producing fine wine at Pepperilly Estate - his vineyard in the Ferguson Valley.

Over the years Warwick's focus has been on maintaining an extremely high level of service as well as training and supporting key staff. He is a hands on Managing Director and will often be found assisting staff in the bar or restaurant through busy times or just having a chat with customers.

Michele
Michele Nicoti

Michele Nicoti is our hard working Restaurant Manager. With over 15 years experience in the hospitality industry, Michele assists in the decision making process within the restaurant and assists the Managing Director with the day to day running.

Courtney Sinclair

Courtney started working at Matilda Bay Restaurant in 2003 while studying at UWA. In August 2007 she took the role of Function Coordinator alongside Melissa Henderson until early 2010 when she moved into Sales & Marketing for both Matilda Bay Restaurant & Pepperilly Estate Wines.

Melissa Henderson & Thea Christou

Melissa Henderson & Thea Christou are our Function Coordinators. Melissa has been working at Matilda Bay for the past 12 years and her knowledge and experience means she is an integral member of the team. Thea Christou has recently joined Matilda Bay and is extremely approachable when it comes to planning your special day.


Alex Kandie

Alex is an amazing Function Manager. He has worked at Matilda Bay for the past 5 years and ensures that every function runs smoothly. Alex and the function staff continue to provide excellent service and maintain the wonderful reputation built over the years.

Sophia Cowling
Sophia Cowling

Sophia is our Receptionist and the customer’s first point of contact. Sophia maintains the busy reception area not only taking telephone and email enquiries but assisting the Restaurant Managers in the day to day running of the restaurant.
